Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 1 cup beef broth
- 2 cups mixed vegetables (frozen or fresh)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 2 cups macaroni, uncooked
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat.
- Add chopped onion and minced garlic. Cook until onion is translucent.
- Stir in diced tomatoes, tomato sauce, beef broth, mixed vegetables, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Add uncooked macaroni to the beef mixture.
- Transfer everything to a casserole dish.
- Bake for 30-35 minutes or until the macaroni is tender.
Notes
- Let the casserole cool for a few minutes before serving.
- Store leftovers in the refrigerator for up to 3 days.
- You can substitute ground turkey for a lighter option.
