Ingredients

- 2 cups brown rice
- 1 pound chicken breast
- 2 cups broccoli
- 1 cup black beans
- 1 tablespoon olive oil
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cook brown rice according to package instructions.
- Season chicken breast with olive oil, garlic powder, paprika, salt, and pepper.
- Place chicken on a baking sheet and bake for 25-30 minutes.
- Steam broccoli until tender.
- In a bowl, combine cooked rice, black beans, and steamed broccoli.
- Slice the baked chicken and serve over the rice mixture.
- Divide into meal prep containers.
Notes
- This meal can be stored in the fridge for up to 5 days.
- Feel free to substitute chicken with turkey or tofu for variety.
- Add more vegetables to increase fiber content.
