Ingredients

- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, cut into chunks
- 4 potatoes, cut into quarters
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Brown the roast on all sides, then remove it from the pot.
- Add chopped onion and garlic to the pot and sauté until soft.
- Return the roast to the pot and add carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary.
- Cover the pot and transfer it to the oven.
- Cook for 3-4 hours until the meat is tender.
- Remove from oven and let it rest before slicing.
Notes
- Serve with gravy made from the cooking liquid.
- Leftovers can be used in sandwiches or soups.
- Adjust vegetables based on your preference.
