Ingredients

  • 34 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into quarters
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Brown the roast on all sides, then remove it from the pot.
  5. Add chopped onion and garlic to the pot and sauté until soft.
  6. Return the roast to the pot and add carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary.
  7. Cover the pot and transfer it to the oven.
  8. Cook for 3-4 hours until the meat is tender.
  9. Remove from oven and let it rest before slicing.

Notes

  • Serve with gravy made from the cooking liquid.
