- 2 pounds corned beef brisket
- 1 onion, quartered
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 teaspoons black peppercorns
- 2 bay leaves
- 3 carrots, chopped
- 4 potatoes, quartered
- 1 head of cabbage, cut into wedges
Instructions
- Rinse the corned beef under cold water.
- Place corned beef in a large pot and add onion, garlic, beef broth, peppercorns, and bay leaves.
- Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 2.5 to 3 hours until tender.
- Add carrots and potatoes, cooking for an additional 30 minutes.
- Add cabbage and cook for 15 more minutes.
- Remove corned beef and let it rest before slicing.
- Serve with vegetables and broth.
