Ingredients

  • 3 to 4 pounds corned beef brisket
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 2 bay leaves

Instructions

  1. Place the sliced onion and minced garlic at the bottom of the slow cooker.
  2. Put the corned beef brisket on top of the onion and garlic.
  3. Add the beef broth, carrots, and potatoes around the meat.
  4. Sprinkle the black peppercorns and mustard seeds over the brisket.
  5. Add the bay leaves to the broth.
  6. Cover and cook on low for 8 to 10 hours or until the meat is tender.
  7. Remove the meat, let it rest, and slice before serving.

  • For added flavor, you can include cabbage in the last hour of cooking.
