Description
A simple and delicious corned beef recipe made in a slow cooker.
Ingredients

- 3 to 4 pounds corned beef brisket
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 4 carrots, chopped
- 4 potatoes, quartered
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seeds
- 2 bay leaves
Instructions
- Place the sliced onion and minced garlic at the bottom of the slow cooker.
- Put the corned beef brisket on top of the onion and garlic.
- Add the beef broth, carrots, and potatoes around the meat.
- Sprinkle the black peppercorns and mustard seeds over the brisket.
- Add the bay leaves to the broth.
- Cover and cook on low for 8 to 10 hours or until the meat is tender.
- Remove the meat, let it rest, and slice before serving.
Notes
- For added flavor, you can include cabbage in the last hour of cooking.
- Adjust the seasoning according to your taste.
