- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 cup corn
- 2 cups shredded cheese
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned.
- Drain excess fat.
- Add diced tomatoes, kidney beans, corn, chili powder, salt, and pepper.
- Simmer for 15 minutes, stirring occasionally.
- Top with shredded cheese and cover until melted.
