Ingredients

- 3 eggs
- 1/2 cup cottage cheese
- 1/4 cup spinach, chopped
- 1/4 cup bell pepper, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Whisk eggs in a bowl and season with salt and pepper.
- Add spinach and bell pepper to the pan, sauté for 2 minutes.
- Pour in the whisked eggs and cook until set, stirring occasionally.
- Remove from heat and serve with cottage cheese on the side.
