Instructions
- Wash the lemons thoroughly.
- Peel the lemons, avoiding the white pith.
- Combine the lemon peels and vodka in a large jar. Seal and let it sit for 2 weeks in a cool, dark place.
- After 2 weeks, prepare a simple syrup by boiling sugar and water together until dissolved.
- Let the syrup cool, then mix it with the lemon-infused vodka.
- Strain the mixture to remove lemon peels.
- Bottle the lemoncello and refrigerate.
- Allow it to chill for at least 24 hours before serving.
