Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Add cheese and diced vegetables to the egg mixture.
- Heat olive oil in a skillet over medium heat.
- Pour the egg mixture into the skillet and cook until the edges set.
- Transfer the skillet to the oven and bake for 15 minutes.
- While baking, toast slices of sourdough bread.
- Serve the baked eggs with toast and fresh fruit.
