Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, baking soda, salt, and cinnamon.
  3. In another bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until combined. If using, fold in the dark chocolate chips or raisins.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • These cookies can be stored in an airtight container at room temperature for up to a week.
