- 2 cups rolled oats
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, baking soda, salt, and cinnamon.
- In another bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until combined. If using, fold in the dark chocolate chips or raisins.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- These cookies can be stored in an airtight container at room temperature for up to a week.
- Feel free to customize the cookies with nuts, seeds, or dried fruit for added nutrition.
