Ingredients

  • 4 cups of water
  • 1 tablespoon of salt
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • 1 teaspoon of pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring water to a boil and add salt.
  3. Add the rice to the boiling water, reduce heat, and cover.
  4. Cook for 18-20 minutes or until rice is tender and water is absorbed.
  5. In a separate pan, heat olive oil and sauté onion and garlic until soft.
  6. Add mixed vegetables and cook for 5 minutes.
  7. Fluff the rice with a fork and mix in the sautéed vegetables.
  8. Season with pepper and serve hot.

Notes

  • Use vegetable broth instead of water for more flavor.
  • Feel free to add your choice of protein.
