A light and refreshing summer dinner recipe.
Ingredients

- 2 cups of grilled chicken, diced
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 2 cups of mixed greens
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Grill the chicken until fully cooked and dice it.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
- Add the grilled chicken and feta cheese to the bowl.
- In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Serve immediately.

- Use any protein of your choice.
- Feel free to add other vegetables.
