Ingredients

- 2 cups of cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Grilled chicken breasts (optional)
Instructions
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If using, slice grilled chicken and serve on top of the salad.
- Chill in the refrigerator for 15 minutes before serving.
