Ingredients

  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of red onion, diced
  • 1/4 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring water to a boil and add quinoa.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
  7. Add the cooked quinoa to the bowl.
  8. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  9. Pour the dressing over the salad and toss to combine.
  10. Serve chilled or at room temperature.
