Description

A refreshing summer meal perfect for warm days.


Ingredients

Scale
  • 2 cups of quinoa
  • 4 cups of water
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. Remove from heat and let it cool.
  6. In a large bowl, combine vegetables and parsley.
  7. Add cooled quinoa to the bowl.
  8. In a small bowl, whisk olive oil and lemon juice.
  9. Pour dressing over the salad and mix well.
  10. Season with salt and pepper to taste.

  • Serve chilled for best flavor.
  • Add your choice of protein for a complete meal.
