Description
A refreshing summer soup that combines fresh vegetables and herbs.
Ingredients

- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 cup diced cucumber
- 1 cup corn kernels
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh basil
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, combine vegetable broth and diced tomatoes.
- Add cucumber, corn, and red onion.
- Simmer for 15 minutes over medium heat.
- Stir in chopped basil, salt, and pepper.
- Remove from heat and let cool.
- Serve chilled.
Notes
- Best served cold on hot days.
- Can be garnished with extra basil.
- Store leftovers in the refrigerator for up to 3 days.
