A nutritious and easy sweet potato meal prep that you can enjoy throughout the week.
Ingredients

- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into cubes.
- Toss the sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
- Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes, until tender.
- In a bowl, mix black beans, corn, and red bell pepper.
- Once sweet potatoes are done, let them cool slightly.
- Assemble meal prep containers with a layer of sweet potatoes, then the bean mixture, and top with avocado and cilantro.
Notes
- Customize with your favorite vegetables.
- Store in the fridge for up to 5 days.
- Reheat in the microwave before serving.
