Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes.
  3. Toss the sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  4. Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes, until tender.
  5. In a bowl, mix black beans, corn, and red bell pepper.
  6. Once sweet potatoes are done, let them cool slightly.
  7. Assemble meal prep containers with a layer of sweet potatoes, then the bean mixture, and top with avocado and cilantro.
