Ingredients

- 2 medium sweet potatoes, washed
- 1 cup water
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Place the sweet potatoes in the Instant Pot.
- Add water and olive oil.
- Seal the lid and set the valve to sealing.
- Cook on high pressure for 15 minutes.
- Let the pressure release naturally for 10 minutes.
- Quick release any remaining pressure.
- Remove sweet potatoes and let cool before serving.
Notes
- Adjust cooking time for larger sweet potatoes.
- Sweet potatoes can be mashed or served whole.
- Store leftovers in the refrigerator for up to 5 days.
