  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts (optional)
  • 1 cup whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together butter, granulated sugar, and brown sugar.
  3. Add eggs, one at a time, mixing well after each addition.
  4. Stir in vanilla extract and pumpkin puree.
  5. In another bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture.
  7. Fold in chopped nuts if desired.
  8. Pour the batter into a greased baking pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving with whipped cream.
