Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and ginger, sauté for 30 seconds until fragrant.
  3. Add cubed tofu and cook until golden brown, about 5 minutes.
  4. Stir in mixed vegetables and cook for another 5-7 minutes until tender-crisp.
