- 12 pieces Stuffed Jalapeños (Filled with cream cheese)
- 1 cup Chorizo (Cooked and crumbled)
- 1 cup Cheddar Cheese (Shredded)
- 1/2 cup Cotija Cheese (Crumbled)
- 1 cup Sour Cream
- 1 Avocado (Sliced for garnish)
Instructions
- In a mixing bowl, combine mashed avocados, lime juice, red onion, tomato, cilantro, and salt. Mix well.
- Serve the guacamole with tortilla chips.
- For mini quesadillas, place cheese and any desired fillings between two small tortillas. Cook on a skillet until golden brown and cheese is melted. Cut into triangles.
- Prepare stuffed jalapeños by filling each jalapeño half with cream cheese, then wrap with chorizo. Bake at 375°F for 20 minutes.
- Serve salsa in a bowl alongside the tortilla chips and guacamole.
- Top mini quesadillas with a dollop of sour cream and a slice of avocado for garnish.
- Arrange all appetizers on a platter and serve immediately.
