  • 1 cup Cheddar Cheese (Shredded)
  • 1/2 cup Cotija Cheese (Crumbled)
  • 1 cup Sour Cream
  • 1 Avocado (Sliced for garnish)

Instructions

  1. In a mixing bowl, combine mashed avocados, lime juice, red onion, tomato, cilantro, and salt. Mix well.
  2. Serve the guacamole with tortilla chips.
  3. For mini quesadillas, place cheese and any desired fillings between two small tortillas. Cook on a skillet until golden brown and cheese is melted. Cut into triangles.
  4. Prepare stuffed jalapeños by filling each jalapeño half with cream cheese, then wrap with chorizo. Bake at 375°F for 20 minutes.
