- 4 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups leafy greens (spinach, kale, or collard greens)
- 1 cup beans or lentils (cooked)
- Fresh herbs (cilantro or parsley) for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Add the chopped tomatoes, bell pepper, and green chilies. Cook for about 5-7 minutes until the vegetables are softened.
- Pour in the broth, and add the ground cumin, ground coriander, paprika, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for 20 minutes to allow the flavors to meld.
- Stir in the leafy greens and cooked beans or lentils. Cook for an additional 5-10 minutes until the greens are wilted.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs.
