Ingredients

  • 1 lb (450g) chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, guacamole, salsa, cheese

Instructions

  1. In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Toss until everything is evenly coated.
  2. Preheat your air fryer to 400°F (200°C).
  3. Place the chicken and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches if your air fryer is small.
  4. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.
  5. Remove from the air fryer and serve immediately with warm tortillas and your choice of toppings.
