Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup bell peppers, sliced
  • 1 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the broccoli, cauliflower, bell peppers, and zucchini.
  3. Drizzle olive oil over the vegetables and add garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  4. Place the vegetable mixture in the air fryer basket in a single layer.
  5. Cook for 10-15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
  6. Remove from the air fryer and garnish with fresh parsley if desired. Serve warm.
