A delicious and easy-to-make apricot tart that highlights the sweet and tangy flavors of fresh apricots. Perfect for any occasion!

Ingredients

Scale
  • 1 pre-made pie crust
  • 4 cups fresh apricots, pitted and halved
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a 9-inch tart pan. Trim any excess crust hanging over the edges.
  3. In a large bowl, combine the halved apricots, sugar, cornstarch, vanilla extract, almond extract, and lemon juice. Toss gently until the apricots are coated.
  4. Pour the apricot mixture into the prepared tart shell, spreading it evenly.
  5. In a small bowl, whisk together the egg and milk to make the egg wash. Brush the edges of the tart with the egg wash.
  6. Bake the tart in the preheated oven for 30-35 minutes, or until the crust is golden brown and the apricots are tender.
  7. Allow the tart to cool for at least 15 minutes before slicing. Serve warm or at room temperature.

Notes

  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the apricot mixture.
  • Serve the tart with a scoop of vanilla ice cream or a dollop of whipped cream for a delightful dessert.
