- 1 pre-made pie crust
- 4 cups fresh apricots, pitted and halved
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and fit it into a 9-inch tart pan. Trim any excess crust hanging over the edges.
- In a large bowl, combine the halved apricots, sugar, cornstarch, vanilla extract, almond extract, and lemon juice. Toss gently until the apricots are coated.
- Pour the apricot mixture into the prepared tart shell, spreading it evenly.
- In a small bowl, whisk together the egg and milk to make the egg wash. Brush the edges of the tart with the egg wash.
- Bake the tart in the preheated oven for 30-35 minutes, or until the crust is golden brown and the apricots are tender.
- Allow the tart to cool for at least 15 minutes before slicing. Serve warm or at room temperature.
Notes
- For extra flavor, you can add a pinch of cinnamon or nutmeg to the apricot mixture.
