Description
This authentic German potato salad is warm, tangy, and completely addictive. Perfect as a side dish for barbecues or family gatherings, it combines tender potatoes with a zesty dressing that will have everyone coming back for seconds.

- 2 pounds (900g) waxy potatoes, such as Yukon Gold
- 1/2 cup (120ml) chicken or vegetable broth
- 1/4 cup (60ml) apple cider vinegar
- 1/4 cup (60ml) vegetable oil
- 1 tablespoon Dijon mustard
- 1 small red onion, finely chopped
- 4 slices of crispy bacon, chopped
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by washing the potatoes thoroughly. Place them in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil and cook until the potatoes are tender but still firm, about 15-20 minutes.
- Once cooked, drain the potatoes and let them cool slightly. While they are still warm, peel the potatoes and cut them into bite-sized pieces.
- In a skillet, cook the chopped bacon until crispy. Remove from the pan and set aside, leaving the drippings in the skillet.
- In the same skillet with the bacon drippings, add the chopped red onion and sauté until translucent.
- Add the chicken or vegetable broth, apple cider vinegar, vegetable oil, and Dijon mustard to the skillet. Stir well and bring to a simmer. Cook for about 2-3 minutes to allow the flavors to meld.
- In a large mixing bowl, combine the warm potato pieces with the dressing mixture. Gently toss to coat the potatoes evenly.
- Add the crispy bacon to the potato salad and season with salt and pepper to taste.
- Garnish with fresh chopped parsley before serving warm.
Notes
- For a vegetarian version, use vegetable broth instead of chicken broth.
