Ingredients

  • 2 pounds (900g) waxy potatoes, such as Yukon Gold
  • 1/2 cup (120ml) chicken or vegetable broth
  • 1/4 cup (60ml) apple cider vinegar
  • 1/4 cup (60ml) vegetable oil
  • 1 tablespoon Dijon mustard
  • 1 small red onion, finely chopped
  • 4 slices of crispy bacon, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by washing the potatoes thoroughly. Place them in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil and cook until the potatoes are tender but still firm, about 15-20 minutes.
  2. Once cooked, drain the potatoes and let them cool slightly. While they are still warm, peel the potatoes and cut them into bite-sized pieces.
  3. In a skillet, cook the chopped bacon until crispy. Remove from the pan and set aside, leaving the drippings in the skillet.
  4. In the same skillet with the bacon drippings, add the chopped red onion and sauté until translucent.
  5. Add the chicken or vegetable broth, apple cider vinegar, vegetable oil, and Dijon mustard to the skillet. Stir well and bring to a simmer. Cook for about 2-3 minutes to allow the flavors to meld.
  6. In a large mixing bowl, combine the warm potato pieces with the dressing mixture. Gently toss to coat the potatoes evenly.
  7. Add the crispy bacon to the potato salad and season with salt and pepper to taste.
  8. Garnish with fresh chopped parsley before serving warm.

Notes

  • For a vegetarian version, use vegetable broth instead of chicken broth.
