Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until well combined.
  4. Add the baking soda and salt, and mix until incorporated.
  5. Gradually add the whole wheat flour and cinnamon (if using), stirring gently until just combined. Do not overmix.
  6. Fold in any optional ingredients like nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
