- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups whole wheat flour
- 1 teaspoon cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until well combined.
- Add the baking soda and salt, and mix until incorporated.
- Gradually add the whole wheat flour and cinnamon (if using), stirring gently until just combined. Do not overmix.
- Fold in any optional ingredients like nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to use very ripe bananas for the best flavor and sweetness.
- Store leftover banana bread covered at room temperature for up to 3 days, or in the fridge for up to a week.
- This banana bread can be frozen for up to 3 months. Wrap it tightly in plastic wrap and then in aluminum foil before freezing.
