  • 1 cup buttermilk
  • 2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 1/2 cup sprinkles (optional)
  • Graduation decorations (e.g. edible caps, diplomas)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with the flour mixture. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  8. In a separate bowl, mix together powdered sugar, cocoa powder, and heavy cream until smooth and creamy to make the frosting.
  9. Once the cakes are completely cool, frost the top of one cake layer, place the second layer on top, and frost the top and sides of the entire cake.
  10. Decorate with sprinkles and graduation decorations as desired.
  11. Slice and serve your beautiful graduation cake, celebrating your achievement!

Notes

  • Feel free to customize the cake flavor by adding lemon zest or almond extract.
