- 1 pound breakfast sausage, crumbled
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 (30-ounce) package frozen hash browns, thawed
- 8 large eggs
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the breakfast sausage until browned. Drain excess grease.
- Add the chopped onion and bell pepper to the skillet with the sausage and cook until soft, about 5 minutes.
- In a large bowl, combine the thawed hash browns, cooked sausage mixture, eggs, milk, salt, pepper, garlic powder, onion powder, and paprika. Mix well.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 45 minutes or until the eggs are set and the top is golden brown.
- Allow to cool for a few minutes before slicing and serving.
Notes
- You can add other vegetables like spinach or mushrooms for extra flavor.
- This casserole can be prepared the night before and refrigerated, just add a few extra minutes to the cooking time if baking from cold.
