  • 1 pound breakfast sausage, crumbled
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 (30-ounce) package frozen hash browns, thawed
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned. Drain excess grease.
  3. Add the chopped onion and bell pepper to the skillet with the sausage and cook until soft, about 5 minutes.
  4. In a large bowl, combine the thawed hash browns, cooked sausage mixture, eggs, milk, salt, pepper, garlic powder, onion powder, and paprika. Mix well.
  5. Spread the mixture evenly in a greased 9×13 inch baking dish.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Bake in the preheated oven for 45 minutes or until the eggs are set and the top is golden brown.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

  • You can add other vegetables like spinach or mushrooms for extra flavor.
  • This casserole can be prepared the night before and refrigerated, just add a few extra minutes to the cooking time if baking from cold.
