A delicious and easy chicken fried rice recipe that brings together tender chicken, colorful vegetables, and perfectly cooked rice, all tossed in a savory sauce.

- 2 cups cooked white rice (preferably day-old)
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons vegetable oil
- 1 cup frozen peas and carrots mix
- 3 green onions, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 2 eggs, beaten
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the frozen peas and carrots mix and cook for another 2-3 minutes until heated through.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
- Add the cooked rice to the skillet, followed by the cooked chicken. Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together and cook for another 3-4 minutes, allowing the rice to crisp slightly.
- Add the sliced green onions, and season with salt and pepper to taste. Mix well and serve hot.
Notes
- For best results, use day-old rice as it is drier and prevents the fried rice from becoming mushy.
- Feel free to customize the recipe by adding other vegetables like bell peppers, broccoli, or mushrooms.
- You can also substitute the chicken with shrimp, beef, or tofu for a different protein option.
