  • 2 cups cooked white rice (preferably day-old)
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons vegetable oil
  • 1 cup frozen peas and carrots mix
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 eggs, beaten

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the frozen peas and carrots mix and cook for another 2-3 minutes until heated through.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  6. Add the cooked rice to the skillet, followed by the cooked chicken. Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together and cook for another 3-4 minutes, allowing the rice to crisp slightly.
  7. Add the sliced green onions, and season with salt and pepper to taste. Mix well and serve hot.

Notes

  • For best results, use day-old rice as it is drier and prevents the fried rice from becoming mushy.
  • Feel free to customize the recipe by adding other vegetables like bell peppers, broccoli, or mushrooms.
