Description
These crispy chicken taquitos are a quick and easy meal made in the air fryer. Perfectly seasoned shredded chicken wrapped in corn tortillas and cooked to a golden brown.

- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 8–10 corn tortillas
- Non-stick cooking spray
Instructions
- In a large bowl, combine the shredded chicken, cheese, salsa, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Warm the corn tortillas in a microwave for 30 seconds to make them pliable.
- Spoon about 2 tablespoons of the chicken mixture onto each tortilla. Roll tightly and secure with a toothpick if necessary.
- Spray the air fryer basket with non-stick cooking spray. Place the taquitos in the basket in a single layer, ensuring they are not touching.
- Spray the tops of the taquitos with non-stick cooking spray to help them crisp up.
- Air fry at 400°F (200°C) for 8-10 minutes, or until golden brown and crispy, flipping halfway through cooking.
- Remove from the air fryer and let cool slightly before serving. Enjoy with your favorite dipping sauces!
Notes
- For extra flavor, add diced jalapeños or bell peppers to the chicken mixture.
- These can be made ahead of time and frozen. Just add a few extra minutes to the cooking time if cooking from frozen.
- Serve with guacamole, sour cream, or your favorite salsa.
