- 1 cup (240ml) heavy cream, chilled
- 1 cup (170g) semi-sweet chocolate chips
- 3 large eggs, separated
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth. Set aside to cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.
- In another bowl, whisk together the egg yolks and granulated sugar until pale and fluffy. Stir in the melted chocolate and vanilla extract until well combined.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture until combined. Then, fold in the beaten egg whites until no white streaks remain.
- Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours before serving. Garnish with chocolate shavings or whipped cream if desired.

- For a richer flavor, use dark chocolate instead of semi-sweet chocolate.
