  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
