- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add sun-dried tomatoes, spinach, Italian seasoning, and Parmesan cheese. Stir until the spinach is wilted and the sauce is well combined.
- Return the chicken to the skillet and simmer for an additional 2-3 minutes to heat through.
- Garnish with fresh parsley before serving.
