- 2 cups cooked rotini pasta
- 2 cups cooked chicken, shredded or diced
- 1 cup celery, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup grapes, halved (optional)
- 1/2 cup almonds, sliced (optional)
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the cooked rotini pasta and shredded chicken.
- Add the diced celery and red onion to the bowl.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the chicken and pasta mixture, and stir gently to combine until everything is well coated.
- If using, fold in the grapes and sliced almonds.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Before serving, garnish with fresh parsley.
