Crispy Air Fryer Chicken Parmesan with Garlic Butter Spaghetti

Ingredients

  • 2 chicken breasts (boneless and skinless)
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup parmesan cheese (grated)
  • 1 cup bread crumbs (Italian seasoned)
  • 1 egg (beaten)
  • 8 oz spaghetti (uncooked)
  • 4 cloves garlic (minced)
  • 4 tbsp butter (unsalted)
  • 2 cups potatoes (cubed)
  • 2 tbsp olive oil (for roasting potatoes)
  • to taste salt
  • to taste pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice a pocket into each chicken breast and stuff with mozzarella cheese.
  3. Dip each stuffed chicken breast in beaten egg, then coat with bread crumbs.
  4. Place the coated chicken in the air fryer and cook for 15-20 minutes or until golden brown and cooked through.
  5. While the chicken is cooking, boil a pot of salted water and cook spaghetti according to package instructions.
  6. In a skillet, melt butter over medium heat and add minced garlic, sautéing until fragrant.
  7. Drain the spaghetti and toss it in the garlic butter, seasoning with salt and pepper to taste.
  8. In another bowl, toss cubed potatoes with olive oil, salt, pepper, and Italian seasoning, then roast in the air fryer for 15-20 minutes until crispy.
  9. Serve the crispy chicken parmesan stuffed with mozzarella alongside garlic butter spaghetti and crispy roasted potatoes.

Notes

  • Feel free to add marinara sauce on top of the chicken for extra flavor.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C).
  • You can substitute chicken with turkey if preferred.
