- 1 pound salmon fillet, skinless and cut into bite-sized pieces
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 teaspoon ground black pepper
- 1 tablespoon sesame seeds (optional)
- 1 cup jasmine rice
- 2 cups water
- 1 bunch asparagus, trimmed
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, sesame oil, and black pepper to create the marinade.
- Add salmon pieces to the bowl and toss to coat. Let marinate for at least 15 minutes.
- While the salmon is marinating, rinse jasmine rice under cold water until the water runs clear. In a medium pot, combine rice and water with a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed.
- Preheat the air fryer to 400°F (200°C).
- Place the marinated salmon pieces in the air fryer basket in a single layer. Cook for 8-10 minutes or until the salmon is crispy and cooked through.
- While the salmon cooks, prepare the asparagus. In a bowl, toss the asparagus with olive oil, salt, and pepper. Place in the air fryer after the salmon has cooked for 4-5 minutes, cooking until tender and slightly crispy.
- Once everything is cooked, serve the crispy salmon bites over a bed of jasmine rice, garnish with sesame seeds, and add the air-fried asparagus on the side.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
- Ensure the salmon is cut into uniform pieces for even cooking.
- You can substitute jasmine rice with brown rice or quinoa if desired.
