  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a 9×13 inch baking dish, pour the melted butter evenly across the bottom.
  3. Sprinkle the brown sugar over the melted butter.
  4. Arrange the drained crushed pineapple and optional sliced peaches evenly over the brown sugar layer.
  5. In a mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  6. In another bowl, whisk together the milk, eggs, and vanilla extract.
  7. Add the wet ingredients to the dry ingredients and mix until just combined.
  8. Pour the batter over the pineapple and peaches in the baking dish.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool for about 10 minutes before inverting onto a serving plate.
