- 2 cans of salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 4 medium potatoes, cut into wedges
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
Instructions
- In a bowl, combine the flaked salmon, breadcrumbs, parsley, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into patties, about 2 inches in diameter.
- Preheat your air fryer to 400°F (200°C).
- In a separate bowl, toss the potato wedges with olive oil, paprika, oregano, salt, and pepper until evenly coated.
- Place the potato wedges in the air fryer basket and cook for 15 minutes, shaking halfway through.
- While the potatoes are cooking, add the salmon patties to the air fryer in a single layer. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve the salmon patties hot with the crispy air fryer potatoes on the side.
Notes
- Feel free to add other herbs and spices to the salmon mixture for additional flavor.
- These salmon patties can also be served with a dipping sauce like tartar or aioli.
- Store leftover salmon patties in the refrigerator for up to 3 days.
