Deliciously Easy Canned Salmon Recipes with Crispy Potatoes

Ingredients

  • 2 cans of salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 4 medium potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano

Instructions

  1. In a bowl, combine the flaked salmon, breadcrumbs, parsley, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into patties, about 2 inches in diameter.
  3. Preheat your air fryer to 400°F (200°C).
  4. In a separate bowl, toss the potato wedges with olive oil, paprika, oregano, salt, and pepper until evenly coated.
  5. Place the potato wedges in the air fryer basket and cook for 15 minutes, shaking halfway through.
  6. While the potatoes are cooking, add the salmon patties to the air fryer in a single layer. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve the salmon patties hot with the crispy air fryer potatoes on the side.

Notes

  • Feel free to add other herbs and spices to the salmon mixture for additional flavor.
  • These salmon patties can also be served with a dipping sauce like tartar or aioli.
