- 1 cup pitted dates
- 1 cup walnuts
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup shredded coconut (optional)
Instructions
- In a food processor, combine the pitted dates and walnuts. Pulse until finely chopped.
- Add the rolled oats, cocoa powder, vanilla extract, and salt to the processor. Pulse until the mixture is well combined and sticky.
- If the mixture is too dry, add a tablespoon of water at a time until it holds together.
- Scoop out tablespoon-sized portions of the mixture and roll them into balls.
- If desired, roll the balls in shredded coconut for added texture and flavor.
- Place the energy balls in the refrigerator for at least 30 minutes to firm up before serving.
Notes
- Store the energy balls in an airtight container in the refrigerator for up to one week.
- You can substitute walnuts with any nut of your choice or omit nuts for a nut-free version.
