Ingredients

  • 1 cup pitted dates
  • 1 cup walnuts
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a food processor, combine the pitted dates and walnuts. Pulse until finely chopped.
  2. Add the rolled oats, cocoa powder, vanilla extract, and salt to the processor. Pulse until the mixture is well combined and sticky.
  3. If the mixture is too dry, add a tablespoon of water at a time until it holds together.
  4. Scoop out tablespoon-sized portions of the mixture and roll them into balls.
  5. If desired, roll the balls in shredded coconut for added texture and flavor.
  6. Place the energy balls in the refrigerator for at least 30 minutes to firm up before serving.
