  • 8 oz (about 2 cups) rotini pasta
  • 1 cup diced cooked chicken (or ground beef)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell pepper (any color)
  • 1/2 cup diced red onion
  • 1 packet taco seasoning mix
  • 1/2 cup ranch dressing
  • 2 cups Doritos, crushed (any flavor)
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, corn, cheddar cheese, bell pepper, red onion, and taco seasoning.
  3. Pour the ranch dressing over the salad and toss until everything is well combined.
  4. Add the crushed Doritos to the salad and gently fold them in, being careful not to crush them too much.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped fresh cilantro if desired.
