  1. Hard-boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover the pot and remove from heat. Let the eggs sit for 10-12 minutes.
  2. Remove the eggs from the pot and place them in an ice bath to cool completely.
  3. Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  4. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the yolks. Mash together until smooth and creamy.
  5. Divide the yolk mixture into separate bowls based on how many colors you want to create.
  6. Add a few drops of food coloring to each bowl and mix until you achieve the desired color.
  7. Spoon or pipe the colored yolk mixture back into the egg whites.
  8. Sprinkle with paprika and garnish with chives or parsley if desired.
  9. Serve immediately or refrigerate until ready to serve.

Notes
