Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the asparagus, carrots, and new potatoes with olive oil, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the vegetables are tender and lightly browned.
- While the vegetables are roasting, steam the green beans until tender-crisp, about 5-7 minutes.
- In a small bowl, whisk together the lemon juice, minced garlic, and fresh herbs.
- Once the roasted vegetables are done, transfer them to a serving bowl.
- Add the steamed green beans to the serving bowl.
- Pour the lemon-herb dressing over the vegetables and toss gently to combine.
- Serve immediately as a healthy and delicious Easter side dish.
Notes
