Description
This easy baked salmon recipe is served with three types of crispy potatoes and a creamy dill sauce, making it a perfect weeknight meal.

- 4 salmon fillets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 3 medium potatoes (russet, sweet, and red), cut into wedges
- 1 tablespoon fresh dill, chopped
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the potato wedges with olive oil, garlic powder, paprika, salt, and pepper. Toss until evenly coated.
- Spread the potato wedges on a baking sheet in a single layer. Bake for 20 minutes.
- While the potatoes are baking, prepare the salmon. Season the salmon fillets with olive oil, garlic powder, paprika, salt, and pepper.
- After 20 minutes, remove the baking sheet from the oven and push the potatoes to one side. Place the salmon fillets on the other side of the baking sheet.
- Return the baking sheet to the oven and bake for an additional 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
- While the salmon and potatoes are baking, make the dill sauce by combining sour cream, lemon juice, Dijon mustard, and fresh dill in a small bowl. Mix well.
- Once everything is done baking, serve the salmon with the crispy potatoes and drizzle the dill sauce on top.
Notes
- Feel free to use your favorite herbs for the sauce if you don’t have dill.
- You can substitute the salmon with other fish like trout or tilapia if desired.
