- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 lemon, sliced
- 1 pound baby potatoes
- 2 tablespoons butter
- 1/4 cup fresh dill, chopped
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Boil the baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
- On a baking sheet, place the salmon fillets. Drizzle with olive oil and season with salt, pepper, and lemon slices on top.
- Using the bottom of a glass or a potato masher, gently smash the boiled potatoes until they are flattened but still in one piece. Place them on the same baking sheet as the salmon.
- Drizzle the smashed potatoes with melted butter, and season with salt and pepper.
- Bake the salmon and potatoes for 15-20 minutes, or until the salmon is cooked through and the potatoes are golden and crispy.
- While the salmon and potatoes are baking, prepare the dill sauce: In a small bowl, combine sour cream, Dijon mustard, lemon juice, and chopped dill. Mix well.
- Serve the baked salmon with crispy smashed potatoes and drizzle the dill sauce on top.
