Easy Baked Salmon with 4 Crispy Smashed Potatoes Delight

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced
  • 1 pound baby potatoes
  • 2 tablespoons butter
  • 1/4 cup fresh dill, chopped
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
  3. On a baking sheet, place the salmon fillets. Drizzle with olive oil and season with salt, pepper, and lemon slices on top.
  4. Using the bottom of a glass or a potato masher, gently smash the boiled potatoes until they are flattened but still in one piece. Place them on the same baking sheet as the salmon.
  5. Drizzle the smashed potatoes with melted butter, and season with salt and pepper.
  6. Bake the salmon and potatoes for 15-20 minutes, or until the salmon is cooked through and the potatoes are golden and crispy.
  7. While the salmon and potatoes are baking, prepare the dill sauce: In a small bowl, combine sour cream, Dijon mustard, lemon juice, and chopped dill. Mix well.
  8. Serve the baked salmon with crispy smashed potatoes and drizzle the dill sauce on top.
