- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 8 flour tortillas
- 2 cups shredded cheese
- 1 cup salsa
- 1 cup chopped lettuce
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1 avocado, sliced
Instructions
- In a large skillet over medium heat, cook the ground beef until browned.
- Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for another 5 minutes.
- Warm the tortillas in a separate pan or microwave until soft.
- To assemble, place some of the beef mixture onto each tortilla.
- Top with shredded cheese, salsa, lettuce, tomatoes, sour cream, and avocado slices.
- Fold the tortillas over the filling and serve immediately.
Notes
- Feel free to swap the ground beef for ground turkey or chicken for a lighter option.
- Add or substitute your favorite veggies like bell peppers or onions.
- These can be made ahead of time and stored in the refrigerator for up to 2 days.
