Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 cup salsa
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1 avocado, sliced

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned.
  2. Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for another 5 minutes.
  3. Warm the tortillas in a separate pan or microwave until soft.
  4. To assemble, place some of the beef mixture onto each tortilla.
  5. Top with shredded cheese, salsa, lettuce, tomatoes, sour cream, and avocado slices.
  6. Fold the tortillas over the filling and serve immediately.

Notes

  • Feel free to swap the ground beef for ground turkey or chicken for a lighter option.
  • Add or substitute your favorite veggies like bell peppers or onions.
  • These can be made ahead of time and stored in the refrigerator for up to 2 days.
