- 2 tbsp Olive oil (For sautéing vegetables)
- 1 cup Bell peppers (Sliced)
- 1 cup Zucchini (Sliced)
- 1 cup Cherry tomatoes (Halved)
- 2 cloves Garlic (Minced)
- 1/4 cup Parmesan cheese (Grated)
- to taste Salt
- to taste Pepper
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add bell peppers, zucchini, and garlic; sauté for about 5 minutes until vegetables are tender.
- Stir in cherry tomatoes and cook for an additional 2-3 minutes.
- Add cooked pasta to the skillet and toss to combine.
- Season with salt and pepper, then sprinkle with Parmesan cheese before serving.
