  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, toss the zucchini slices with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Add the cherry tomatoes and Italian seasoning, and toss again.
  4. Place the zucchini and tomato mixture in the air fryer basket in a single layer.
  5. Air fry for 10 minutes, shaking the basket halfway through cooking.
  6. Sprinkle the shredded mozzarella cheese on top and air fry for an additional 2-3 minutes, until the cheese is melted and bubbly.
  7. Remove from the air fryer and serve immediately.
