Ingredients

  • 4 pieces Grilled Lemon Herb Chicken
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic
  • 1 cup Fresh Herbs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 cups Mixed Vegetables

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Add the chicken breasts to the marinade and let sit for 10 minutes.
  3. While the chicken is marinating, preheat your grill or grill pan over medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. In the last few minutes of grilling, add the mixed vegetables to the grill and cook until tender, about 5 minutes.
  6. Once the chicken is cooked, remove from the grill and sprinkle with fresh herbs.
  7. Serve the grilled chicken with the vegetables on the side.

Notes

  • Feel free to substitute chicken with tofu or shrimp for a different protein.
  • You can also add your favorite spices to the marinade for extra flavor.
