- 4 pieces Grilled Lemon Herb Chicken
- 2 tablespoons Olive Oil
- 2 tablespoons Lemon Juice
- 2 cloves Garlic
- 1 cup Fresh Herbs
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 4 cups Mixed Vegetables
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Add the chicken breasts to the marinade and let sit for 10 minutes.
- While the chicken is marinating, preheat your grill or grill pan over medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- In the last few minutes of grilling, add the mixed vegetables to the grill and cook until tender, about 5 minutes.
- Once the chicken is cooked, remove from the grill and sprinkle with fresh herbs.
- Serve the grilled chicken with the vegetables on the side.
Notes
- Feel free to substitute chicken with tofu or shrimp for a different protein.
- You can also add your favorite spices to the marinade for extra flavor.
