This easy Mexican Tres Leches Cake is a moist and delicious dessert perfect for serving a crowd. It features a light sponge cake soaked in three types of milk, topped with whipped cream and fresh fruit.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • Fresh fruit (strawberries, mango, or berries) for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the whole milk. Mix until just combined.
  5. Pour the batter into the prepared baking dish. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  6. In a separate bowl, combine the evaporated milk and sweetened condensed milk. Once the cake is cool, poke holes all over the top with a fork.
  7. Slowly pour the milk mixture over the cake, allowing it to soak in.
  8. In a medium bowl, whip the heavy cream until soft peaks form. Spread the whipped cream over the soaked cake and top with fresh fruit.
  9. Chill the cake in the refrigerator for at least 2 hours before serving. Enjoy!

Notes

  • Tres Leches Cake is best served chilled. Make it a day in advance for even better flavor.
