- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish (optional)
Instructions
- In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to create the crust. Chill in the refrigerator for 10 minutes.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cheesecake filling evenly over the chilled crust in the springform pan.
- Top with mixed fresh berries, arranging them as desired.
- Chill the cheesecake in the refrigerator for at least 4 hours, or until set.
- Garnish with mint leaves before serving. Slice and enjoy your refreshing no-bake dessert!
Notes
- You can substitute the mixed berries with any seasonal fruits you prefer.
- For a chocolate twist, you can add cocoa powder to the cream cheese mixture or drizzle chocolate sauce on top.
